Characteristics
Our commitment to quality entails compliance with rigorous standards in force, dictated by the Regulations that govern the Toro Designation of Origin. These regulations consider the entire process, with specific rules that range from the planting of the vineyard and cultural practices to the sale of the bottled product. In each case, rules are established for classifying the protected product, labelling, harvesting, production and product dispatch, etc. Overall, these standards guarantee the origin and certification of our product.
Red wines are made mainly with the Tinta de Toro variety, always seeking the necessary degree of ripeness to obtain wines with a balance of components resulting in remarkable quality.
WINEMAKING
The destemmed grape is placed in vats, where it ferments with the skins for a time that will depend on the type of wine being made. Thus, young wines will stay in vats for shorter times, and wines destined for ageing in Bordeaux oak barrels will have longer macerations, an extraction that the barrel will tame over time, enhancing their longevity.
RIPENING
Due to the area’s exceptional climate conditions, the Tinta de Toro variety ripens early. This gives the wineries the opportunity to also produce wines using the carbonic maceration system (vatting whole clusters). These fragrant, fresh and aromatic wines begin to be sold from the month of November during the same year as the grape harvest.
